Three things about feline biology and behaviour that change how a palatant has to be built.
Cats lack a functional sweet receptor entirely. Every sweet or fruit-led approach that works in dog food is simply invisible to them, which narrows the usable palette to animal-derived, umami, and savoury signals.
Cats are cautious about unfamiliar food and often fix on textures and aromas learned early in life. A new product has to overcome that hesitancy at first presentation — there is rarely a second chance with the same bowl.
A cat evaluates food by smell before it ever makes contact. If the aroma signal is weak, the bowl gets inspected and abandoned — meaning palatant volatility and release matter as much as the flavor profile itself.

Fish and marine profiles lead clearly — tuna, salmon, whitefish, and shrimp — followed by poultry and liver. Liver is exceptionally effective in feline products relative to how little is needed. Individual cats fix on particular profiles quite rigidly, so a range that covers several strong options tends to outperform a single hero flavor.

Renal, urinary, and hydrolysed diets are frequently unpalatable, and a cat that refuses a therapeutic food receives no benefit from it.
